Apple Cider Cookies

These Apple Cider Cookies are soft, chewy, and packed with cozy fall flavor thanks to reduced apple cider and warm spices. Rolled in sugar before baking, they develop beautiful crinkle tops and lightly crisp edges. Perfect for fall gatherings, cookie exchanges, and festive holiday baking.

Ingredients
  

  • cups apple cider
  • ¾ cup unsalted butter softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar plus extra for rolling
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • tsp ground cinnamon
  • ¼ tsp ground nutmeg or apple pie spice
  • ¾ tsp salt

Method
 

  1. Simmer apple cider until reduced to about ⅓ cup. Cool completely.
  2. Heat oven to 350°F (175°C). Line baking sheets with parchment.
  3. Beat butter, brown sugar, and ½ cup sugar until light and fluffy.
  4. Mix in egg, yolk, and vanilla.
  5. Whisk flour, baking powder, baking soda, spices, and salt.
  6. Add dry ingredients to wet ingredients and mix just until combined.
  7. Stir in reduced cider and chill 30–45 minutes.
  8. Roll dough into balls, coat in sugar, and place on trays.
  9. Bake 10–12 minutes, until edges set and tops crinkle.
  10. Cool 5 minutes on the pan, then move to a rack.

Notes

Reduced cider = stronger flavor and better texture.
Chilling prevents spreading and keeps cookies thick.
Roll in coarse sugar for extra sparkle.
Freeze dough balls and bake later — add 1–2 minutes to bake time.
