- Preheat Oven
- Preheat oven to 400°F (200°C).
- Prepare the Potatoes
- Wash and cut potatoes into halves or bite-sized pieces.
- Season
- In a large bowl, toss potatoes with olive oil, garlic powder, paprika, oregano, salt, and black pepper.
- First Bake
- Spread potatoes on a baking sheet and roast for 30–35 minutes, stirring halfway, until golden and tender.
- Prepare Feta Mixture
- In a small bowl, combine crumbled feta, minced garlic, parsley, and lemon juice.
- Second Bake
- Remove potatoes from the oven, sprinkle the feta mixture over the top, and bake for 10 minutes until the cheese warms and softens.
- Serve
- Garnish with extra parsley or chili flakes before serving.
Notes
For extra crispiness, bake potatoes an additional 5–10 minutes before adding feta.
Block feta melts and tastes better than pre-crumbled feta.
Add cherry tomatoes, olives, or spinach for a Mediterranean twist.
Use sweet potatoes for a sweeter, richer variation.
Best served immediately, but leftovers can be reheated in the oven to maintain crisp texture.
