Ingredients
  

  • For the Potatoes
  • 2 lbs baby potatoes or diced russet potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried oregano
  • Salt to taste
  • Black pepper to taste
  • For the Feta Mixture
  • 1 cup crumbled feta cheese
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 –2 tbsp lemon juice optional
  • Optional: chili flakes for heat

Method
 

  1. Preheat Oven
  2. Preheat oven to 400°F (200°C).
  3. Prepare the Potatoes
  4. Wash and cut potatoes into halves or bite-sized pieces.
  5. Season
  6. In a large bowl, toss potatoes with olive oil, garlic powder, paprika, oregano, salt, and black pepper.
  7. First Bake
  8. Spread potatoes on a baking sheet and roast for 30–35 minutes, stirring halfway, until golden and tender.
  9. Prepare Feta Mixture
  10. In a small bowl, combine crumbled feta, minced garlic, parsley, and lemon juice.
  11. Second Bake
  12. Remove potatoes from the oven, sprinkle the feta mixture over the top, and bake for 10 minutes until the cheese warms and softens.
  13. Serve
  14. Garnish with extra parsley or chili flakes before serving.

Notes

For extra crispiness, bake potatoes an additional 5–10 minutes before adding feta.
Block feta melts and tastes better than pre-crumbled feta.
Add cherry tomatoes, olives, or spinach for a Mediterranean twist.
Use sweet potatoes for a sweeter, richer variation.
Best served immediately, but leftovers can be reheated in the oven to maintain crisp texture.
