Boston Cream Pie Cookies

Soft, cake-like cookies filled with creamy vanilla pudding and topped with rich chocolate ganache—just like classic Boston cream pie in cookie form.

Ingredients
  

  • For the Cookies
  • 1 box yellow cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • For the Filling
  • 1 box 3.4 oz instant vanilla pudding mix
  • 2 cups cold milk
  • For the Chocolate Topping
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix cake mix, eggs, and oil until a thick dough forms.
  3. Scoop tablespoon-sized dough portions onto the sheet and slightly flatten.
  4. Bake for 9–11 minutes. Let cookies cool completely.
  5. Whisk pudding mix with cold milk until thick. Chill 5 minutes.
  6. Heat heavy cream until warm and pour over chocolate chips. Let sit 2 minutes, then stir smooth.
  7. Press a small indent into each cooled cookie center.
  8. Spoon pudding into each indent.
  9. Top with chocolate ganache. Let set before serving.

Notes

Store cookies in the refrigerator due to the creamy filling.
Add filling just before serving for best texture.
Cookies can be baked ahead and frozen without filling.
