Ingredients
  

  • 12 oz linguine
  • 1 lb boneless skinless chicken breasts or thighs
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 2 tbsp chopped parsley optional

Method
 

  1. Cook linguine; reserve ½ cup pasta water and drain.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a skillet over medium-high; cook chicken 5–6 minutes per side. Remove to rest.
  4. Add butter to the pan and sauté garlic until fragrant.
  5. Pour in broth; simmer 2 minutes.
  6. Stir in cream and Parmesan; cook until thickened and smooth.
  7. Toss linguine in the sauce; use pasta water if needed.
  8. Slice chicken, return to skillet, and finish with lemon juice and parsley.

Notes

Add spinach or mushrooms for extra color and nutrients.
Reduce heat if the sauce boils — gentle simmering prevents curdling.
For less spice, cut the Cajun seasoning in half.
