Method
- Preheat oven to 375°F (190°C) and grease a 9×13 dish.
- Brown beef: Heat oil, cook ground beef until browned; drain if needed.
- Add aromatics: Stir in onion 3–4 minutes; add garlic 30 seconds.
- Season: Add salt, pepper, paprika, and thyme.
- Make sauce: Stir in flour; cook 1 minute. Gradually whisk in broth and milk. Simmer until slightly thickened, then stir in sour cream.
- Layer: Add half the potatoes to dish. Spread half the beef mixture over top. Sprinkle with 1 cup cheddar. Repeat layers.
- Top: Drizzle butter and add mozzarella. Cover with foil.
- Bake: 40 minutes covered. Remove foil and bake 12–15 minutes more until potatoes are tender and cheese is golden.
- Rest: Cool 10 minutes, garnish, and serve.
Notes
Use a mandoline for perfectly even slices.
Add ¼ cup cream cheese for extra richness.
Assemble ahead, refrigerate up to 24 hours, then bake — add 10–15 minutes.
Swap ground turkey or chicken and use chicken broth if preferred.
