Cheesy Ground Beef & Potato Casserole

Layers of tender potatoes, savory seasoned ground beef, and melty cheese bake together into the ultimate comfort-food casserole. Simple, hearty, and perfect for family dinners or meal prep.

Ingredients

  • 1 ½ lbs ground beef
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tsp salt or to taste
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp dried thyme or Italian seasoning
  • 2 tbsp flour
  • 1 cup beef broth
  • 1 cup milk
  • ½ cup sour cream
  • 6 cups thinly sliced potatoes Yukon Gold or russet
  • 2 cups shredded cheddar cheese divided
  • ½ cup shredded mozzarella
  • 2 tbsp melted butter
  • Garnish optional
  • Chopped parsley or sliced green onions

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9×13 dish.
  2. Brown beef: Heat oil, cook ground beef until browned; drain if needed.
  3. Add aromatics: Stir in onion 3–4 minutes; add garlic 30 seconds.
  4. Season: Add salt, pepper, paprika, and thyme.
  5. Make sauce: Stir in flour; cook 1 minute. Gradually whisk in broth and milk. Simmer until slightly thickened, then stir in sour cream.
  6. Layer: Add half the potatoes to dish. Spread half the beef mixture over top. Sprinkle with 1 cup cheddar. Repeat layers.
  7. Top: Drizzle butter and add mozzarella. Cover with foil.
  8. Bake: 40 minutes covered. Remove foil and bake 12–15 minutes more until potatoes are tender and cheese is golden.
  9. Rest: Cool 10 minutes, garnish, and serve.

Notes

 
Use a mandoline for perfectly even slices.
Add ¼ cup cream cheese for extra richness.
Assemble ahead, refrigerate up to 24 hours, then bake — add 10–15 minutes.
Swap ground turkey or chicken and use chicken broth if preferred.
