- Marinate the Chicken
- In a bowl, combine chicken, soy sauce, cornstarch, and sesame oil. Mix well and let sit for 10 minutes to tenderize.
- Cook the Noodles
- Boil chow mein noodles according to package instructions.
- Drain, rinse with cold water, and toss with a little oil to prevent sticking.
- Prepare the Sauce
- Whisk together soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, water, and cornstarch until smooth. Set aside.
- Stir-Fry the Chicken
- Heat a large pan or wok over high heat.
- Add oil and cook the chicken for 4–5 minutes until lightly browned and fully cooked. Remove from the pan.
- Cook the Vegetables
- In the same pan, add garlic, ginger, and green onions. Stir for 30 seconds.
- Add cabbage, carrots, and bell pepper. Stir-fry for 2–3 minutes until crisp-tender.
- Combine Everything
- Return the chicken to the pan.
- Add the cooked noodles and pour the chow mein sauce over top.
- Toss & Serve
- Stir everything together on high heat until the noodles are coated and the sauce thickens.
- Serve hot and enjoy!
Notes
For extra flavor, add bean sprouts or snap peas.
Use a wok for the best stir-fry texture.
Slice chicken thin for faster, juicier cooking.
You can replace chicken with shrimp, beef, or tofu.
If noodles clump, rinse lightly and separate before adding.
