Ingredients
  

  • For the Chicken
  • 1 lb 450g chicken breast, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • For the Noodles
  • 8 oz chow mein noodles or thin egg noodles
  • 1 tbsp oil for frying
  • Vegetables
  • 1 cup shredded cabbage
  • 1 carrot julienned
  • 1 bell pepper sliced
  • 3 green onions chopped
  • 2 garlic cloves minced
  • 1 tsp grated ginger
  • Chow Mein Sauce
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce optional
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1 tbsp water
  • 1 tsp cornstarch

Method
 

  1. Marinate the Chicken
  2. In a bowl, combine chicken, soy sauce, cornstarch, and sesame oil. Mix well and let sit for 10 minutes to tenderize.
  3. Cook the Noodles
  4. Boil chow mein noodles according to package instructions.
  5. Drain, rinse with cold water, and toss with a little oil to prevent sticking.
  6. Prepare the Sauce
  7. Whisk together soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, water, and cornstarch until smooth. Set aside.
  8. Stir-Fry the Chicken
  9. Heat a large pan or wok over high heat.
  10. Add oil and cook the chicken for 4–5 minutes until lightly browned and fully cooked. Remove from the pan.
  11. Cook the Vegetables
  12. In the same pan, add garlic, ginger, and green onions. Stir for 30 seconds.
  13. Add cabbage, carrots, and bell pepper. Stir-fry for 2–3 minutes until crisp-tender.
  14. Combine Everything
  15. Return the chicken to the pan.
  16. Add the cooked noodles and pour the chow mein sauce over top.
  17. Toss & Serve
  18. Stir everything together on high heat until the noodles are coated and the sauce thickens.
  19. Serve hot and enjoy!

Notes

For extra flavor, add bean sprouts or snap peas.
Use a wok for the best stir-fry texture.
Slice chicken thin for faster, juicier cooking.
You can replace chicken with shrimp, beef, or tofu.
If noodles clump, rinse lightly and separate before adding.
