Ingredients
Method
- Step 1 — Prepare Pan
- Preheat your oven to 350°F (175°C). Line an 8×8 or 9×9 inch baking pan with parchment paper, leaving an overhang for easy lifting.
- Step 2 — Mix Wet Ingredients
- In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
- Add the eggs and vanilla extract, whisking until creamy.
- Step 3 — Add Dry Ingredients
- In a separate bowl, whisk flour, baking powder, cinnamon, and salt.
- Fold the dry mixture into the wet mixture until fully combined. Do not overmix — this keeps your blondies soft and chewy.
- Step 4 — Spread Batter
- Pour the blondie batter into the prepared baking dish and smooth the top using a spatula.
- Step 5 — Add Cinnamon Sugar Topping
- Mix the cinnamon and sugar in a small bowl.
- Sprinkle generously over the entire surface of the batter.
- Step 6 — Bake
- Bake for 22–25 minutes, depending on your preferred texture:
- 22 minutes = gooey, soft blondies
- 25 minutes = firmer, chewy blondies
- The center should look slightly under-baked — they firm up as they cool.
- Step 7 — Cool & Slice
- Allow the blondies to cool in the pan for 20–30 minutes before slicing into squares.
Notes
Don’t overbake: The key to perfect, chewy blondies is removing them from the oven when the center still looks soft.
Swirl variation: Drop small spoonfuls of softened butter on top before sprinkling the cinnamon sugar for a cinnamon-roll-like swirl.
Add-ins: White chocolate chips, chopped pecans, or crushed cinnamon toast cereal make a delicious upgrade.
Storage: Keep at room temperature in an airtight container for up to 4 days, or freeze for up to 2 months.
Serve warm: Microwave a square for 10 seconds for the perfect gooey texture.
