Ingredients
  

  • For the Cookies
  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup caramel sauce
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the Cheesecake Frosting
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Topping
  • Salted caramel sauce
  • Flaky sea salt

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until fluffy. Add eggs, vanilla, and caramel sauce.
  3. Mix in flour, baking soda, and salt until a thick dough forms.
  4. Scoop large dough balls onto the baking sheet, slightly flatten, and bake for 12–14 minutes. Cool completely.
  5. Beat cream cheese, powdered sugar, and vanilla until smooth.
  6. Spread frosting over cooled cookies. Drizzle with salted caramel and sprinkle sea salt.

Notes

Do not frost warm cookies.
Chill frosted cookies before serving for best texture.
Store in the refrigerator for up to 3 days.
