Ingredients

  • 2 cups cooked chicken shredded or diced (rotisserie works great!)
  • ½ cup dried cranberries
  • ½ cup seedless grapes halved (optional but highly recommended)
  • ½ cup celery finely chopped
  • ¼ cup red onion minced
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice or apple cider vinegar
  • ¼ cup chopped pecans or almonds optional for crunch
  • Salt and pepper to taste

Method

  1. Prepare the Chicken:
  2. Cook or shred your chicken. Rotisserie chicken works perfectly for convenience.
  3. Mix the Dressing:
  4. In a large bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  5. Add Mix-Ins:
  6. Stir in celery, red onion, cranberries, and grapes (if using). Add chopped nuts for extra crunch.
  7. Combine Everything:
  8. Add the chicken to the bowl and mix until all ingredients are evenly coated with the creamy dressing.
  9. Chill & Serve:
  10. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • Substitute Greek yogurt for mayo for a lighter option.
  • Add apples or mandarin oranges for a fruity twist.
  • For extra flavor, mix in a splash of honey or curry powder.
  • Always chill before serving — it enhances the texture and flavor.
