Total Time 4 hours 40 minutes

Ingredients

  • 1/2 cup butter
  • 3/4 cup brown sugar packed
  • 10 –12 slices brioche or challah about 1 loaf
  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup milk
  • 1/3 cup granulated sugar
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon optional
  • 1/4 tsp salt

Method

  1. Grease a 9×13-inch baking dish. Preheat oven to 350°F (175°C) when ready to bake.
  2. In a saucepan, melt butter and brown sugar until smooth. Pour into the baking dish and spread evenly.
  3. Arrange bread slices in the pan in a single, snug layer.
  4. In a bowl, whisk eggs, cream, milk, sugar, vanilla, cinnamon, and salt.
  5. Pour custard over the bread, pressing lightly to help it soak.
  6. Cover and refrigerate at least 4 hours or overnight.
  7. Uncover and bake 35–40 minutes, until puffed and set in the center.
  8. Cool 5 minutes before serving, spooning caramel from the bottom over each slice.

Notes

Use thick, day-old bread for the best texture.
For extra caramelized flavor, sprinkle a little sugar on top and broil briefly.
Store leftovers covered in the fridge up to 3 days; reheat in the oven to keep edges crisp.
