Ingredients
  

  • 3 –4 lb beef chuck roast
  • 2 large onions thinly sliced
  • 2 tablespoons butter
  • 1 packet French onion soup mix
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 tablespoon cornstarch optional

Method
 

  1. Melt butter in a skillet and sauté onions until soft and lightly caramelized.
  2. Place chuck roast into the crock pot. Season with salt, pepper, thyme, and garlic.
  3. Add caramelized onions on top.
  4. Mix beef broth, Worcestershire sauce, and soup mix. Pour over roast.
  5. Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours.
  6. Remove roast, shred or slice.
  7. For thicker gravy, stir in cornstarch slurry and cook 10 minutes more.
  8. Return beef to gravy and serve warm.

Notes

Searing the roast before slow cooking adds extra flavor.
Best cooked on LOW for ultra-tender beef.
Leftovers freeze well for future meals.
