Method
- Melt butter in a skillet and sauté onions until soft and lightly caramelized.
- Place chuck roast into the crock pot. Season with salt, pepper, thyme, and garlic.
- Add caramelized onions on top.
- Mix beef broth, Worcestershire sauce, and soup mix. Pour over roast.
- Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours.
- Remove roast, shred or slice.
- For thicker gravy, stir in cornstarch slurry and cook 10 minutes more.
- Return beef to gravy and serve warm.
Notes
Searing the roast before slow cooking adds extra flavor.
Best cooked on LOW for ultra-tender beef.
Leftovers freeze well for future meals.
