Ingredients

  • Ingredients
  • For the Spicy Honey Chicken:
  • 1 lb boneless skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp hot sauce adjust to taste
  • 1 tbsp soy sauce
  • 2 cloves garlic minced
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • For the Mac and Cheese:
  • 2 cups elbow macaroni cooked al dente
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 1 ½ cups cheddar cheese shredded
  • ½ cup mozzarella cheese shredded
  • Salt and pepper to taste

Method

  1. Prepare the Chicken:
  2. Season chicken with salt, pepper, and smoked paprika. Heat olive oil in a skillet over medium heat and cook chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. Make the Honey Sauce:
  4. In the same skillet, combine honey, soy sauce, hot sauce, and garlic. Stir gently over low heat until the sauce begins to thicken and bubble.
  5. Glaze the Chicken:
  6. Return the cooked chicken to the pan, coating it evenly with the sticky honey mixture. Let it simmer for 2–3 minutes until glossy and flavorful.
  7. Prepare the Mac and Cheese:
  8. In a saucepan, melt butter and whisk in flour to create a roux. Gradually pour in milk while whisking to avoid lumps. Once smooth, add shredded cheddar and mozzarella. Stir until melted and creamy. Season to taste.
  9. Combine and Serve:
  10. Serve a scoop of warm mac and cheese topped with slices of spicy honey chicken. Drizzle extra sauce over the top for added flavor.

Notes

  • For crispier chicken, lightly dredge in flour before cooking.
  • Add crushed red pepper flakes or cayenne for extra heat.
  • Try using whole-grain pasta for a healthier version.
  • Add steamed veggies like broccoli or peas for color and nutrition.
  • Make it ahead — store the chicken and mac separately and reheat gently.
