Easy Crockpot Cheesy Beef and Noodles

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can 10.5 oz cream of mushroom soup
  • 1 can 10.5 oz cream of chicken soup
  • 1 ½ cups beef broth
  • 2 cups shredded cheddar cheese or cheese blend
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 12 oz egg noodles uncooked
  • ½ cup sour cream optional, for extra creaminess
  • 1 tbsp butter or olive oil

Method
 

  1. Brown the Beef:
  2. In a large skillet, cook ground beef with diced onion and garlic over medium heat until browned. Drain excess grease and transfer to the crockpot.
  3. Add Base Ingredients:
  4. Add the cream of mushroom soup, cream of chicken soup, beef broth, onion powder, garlic powder, salt, and pepper. Stir until well mixed.
  5. Slow Cook:
  6. Cover and cook on Low for 4–5 hours or High for 2–3 hours.
  7. Add Noodles:
  8. About 30 minutes before serving, stir in the uncooked egg noodles. Cover and cook on High until noodles are tender (about 25–30 minutes).
  9. Add Cheese:
  10. Stir in shredded cheddar cheese and butter until melted and creamy. If desired, mix in sour cream before serving.
  11. Serve:
  12. Spoon into bowls and enjoy warm!

Notes

  • Don’t add noodles too early or they’ll overcook.
  • Use mozzarella or Velveeta for a creamier version.
  • Stir in peas, corn, or spinach for extra veggies.
