  • 1 ½ cups almond milk or any non-dairy milk
  • 2 large eggs
  • ½ cup creamy peanut butter
  • ¼ cup honey or maple syrup optional
  • 2 ripe bananas mashed
  • 1 teaspoon vanilla extract

  • ¼ cup dark chocolate chips or cocoa nibs
  • ¼ cup chopped nuts walnuts, pecans, or almonds
  • Sliced bananas or berries for topping

Method
 

  1. Preheat the oven:
  2. Preheat your oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish.
  3. Mix dry ingredients:
  4. In a large bowl, combine oats, baking powder, cinnamon, and salt.
  5. Mix wet ingredients:
  6. In another bowl, mash bananas and whisk in eggs, milk, peanut butter, vanilla, and honey (if using).
  7. Combine:
  8. Pour the wet mixture into the dry ingredients and stir until evenly mixed. Add nuts or chocolate chips if desired.
  9. Pour and bake:
  10. Transfer mixture to the prepared baking dish. Smooth the top and add fruit slices or extra toppings.
  11. Bake:
  12. Bake for 30–35 minutes, or until the top is golden and a toothpick comes out clean.
  13. Cool and serve:
  14. Let it cool for 10 minutes, then slice and serve warm with a drizzle of peanut butter or almond milk.
