Garlic Parmesan Crockpot Chicken & Potatoes

Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1.5 lbs baby potatoes halved
  • 4 tbsp butter melted
  • 1 cup heavy cream or half-and-half
  • 1 cup chicken broth
  • 5 cloves garlic minced
  • ¾ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika optional
  • Salt & black pepper to taste
  • 2 tbsp chopped parsley for garnish

Method
 

  1. Add potatoes to the crockpot.
  2. Season chicken with salt, pepper, garlic powder, onion powder, and paprika; place on top.
  3. Whisk melted butter, broth, cream, minced garlic, Italian seasoning, and parmesan.
  4. Pour sauce over chicken and potatoes.
  5. Cook on LOW 6–7 hours or HIGH 3–4 hours.
  6. Stir gently, garnish with parsley and extra parmesan, and serve.

Notes

For thicker sauce, remove lid for last 20 minutes or add 2 tbsp cream cheese.
Chicken thighs may be substituted.
Store leftovers up to 4 days; reheat gently.
