Garlic Steak Tortellini

Ingredients
  

  • 1 lb sirloin or ribeye steak cut into cubes
  • 1 tsp salt divided
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup beef or chicken broth
  • 1 1/2 cups heavy cream
  • 3/4 cup grated Parmesan
  • 18 –20 oz cheese tortellini
  • 2 cups fresh spinach optional
  • Pinch crushed red pepper optional

Method
 

  1. Season steak with 1/2 tsp salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high; sear steak 2–3 minutes per side. Remove.
  3. Lower heat, melt butter, and cook garlic 30–45 seconds.
  4. Add broth and simmer 2 minutes.
  5. Stir in cream and Parmesan and cook until slightly thickened.
  6. Add tortellini and simmer 4–6 minutes, stirring.
  7. Return steak to the pan; fold in spinach if using.
  8. Taste, adjust seasoning, and serve.

Notes

Add a splash of broth if the sauce thickens too much.
Frozen tortellini works — extend cooking time slightly.
For extra richness, finish with a pat of butter before serving.
