Ingredients
  

  • 2 large ripe bananas mashed
  • 1 large egg
  • ¼ cup honey or pure maple syrup
  • 1 tsp vanilla extract
  • ¼ cup olive oil or melted coconut oil
  • cups rolled oats
  • 1 cup whole wheat flour or oat flour for gluten-free
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup unsweetened almond milk or any milk
  • Optional: ¼ cup dark chocolate chips walnuts, or blueberries

Method
 

  1. Preheat the Oven
  2. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease with coconut oil.
  3. Mash the Bananas
  4. In a large bowl, mash ripe bananas with a fork until smooth and creamy.
  5. Mix Wet Ingredients
  6. Add egg, honey, vanilla extract, oil, and almond milk. Whisk until well blended.
  7. Combine Dry Ingredients
  8. In a separate bowl, mix oats, flour, baking powder, baking soda, cinnamon, and salt.
  9. Combine Wet and Dry
  10. Gently fold dry ingredients into wet mixture until just combined. Do not overmix.
  11. Fill Muffin Cups
  12. Spoon batter into muffin tins, filling each about ¾ full.
  13. Bake
  14. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  15. Cool and Serve
  16. Let muffins cool on a wire rack. Enjoy warm or store for meal prep.
