Ingredients

  • For the Pasta:
  • 12 oz bow tie farfalle pasta
  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • ½ cup low-sodium beef broth
  • 1 cup light cream or half-and-half
  • ½ cup Greek yogurt or 4 oz cream cheese
  • ¾ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes optional
  • Salt and black pepper to taste
  • 2 cups fresh spinach or frozen peas optional

Method

  1. Cook the Pasta:
  2. Bring a large pot of salted water to a boil. Cook the bow tie pasta according to package directions until al dente. Drain and set aside.
  3. Brown the Beef:
  4. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
  5. Add Aromatics:
  6. Stir in chopped onion and garlic, cooking for 2–3 minutes until softened and fragrant.
  7. Make the Sauce:
  8. Pour in beef broth to deglaze the pan. Lower the heat, then add cream, Greek yogurt (or cream cheese), Parmesan cheese, Italian seasoning, and red pepper flakes. Stir well until creamy and smooth.
  9. Combine Everything:
  10. Add cooked pasta to the skillet and toss to coat evenly. If the sauce feels too thick, add a little pasta water. Stir in spinach or peas and cook for 1–2 minutes until heated through.
  11. Serve:
  12. Garnish with extra Parmesan and black pepper. Serve warm and enjoy!

Notes

  • Protein Boost: Use lean ground beef (90% or higher) or swap with ground turkey for a lighter version.
  • Add Veggies: Spinach, peas, or mushrooms work perfectly here.
  • Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat with a splash of milk or broth.
  • Gluten-Free Option: Use gluten-free bow tie or penne pasta.
  • Make Ahead: Perfect for meal prep — stays creamy and delicious even after reheating.
