Step 1 – Prep the Ramekins
Preheat oven to 425°F (220°C). Butter four 6-oz ramekins and dust with cocoa powder to prevent sticking.
Step 2 – Melt Chocolate & Butter
In a microwave-safe bowl, combine butter and chocolate. Heat in 20-second bursts, stirring each time, until smooth.
Step 3 – Mix the Batter
In a separate bowl, whisk together eggs, egg yolks, sugar, vanilla, and salt until slightly frothy. Stir in the melted chocolate mixture, then fold in the flour until just combined.
Step 4 – Fill the Ramekins
Divide the batter evenly among the ramekins. Place them on a baking sheet for easy transfer.
Step 5 – Bake
Bake for 12–14 minutes. The edges should be set while the center remains soft. Do not overbake — the gooey center is the secret!
Step 6 – Serve Warm
Let the cakes rest for 1 minute, then carefully invert each onto a dessert plate. Dust with powdered sugar, add berries, and serve immediately.
