Ingredients
  

  • For 4 servings 4 ramekins:
  • ½ cup 115g unsalted butter
  • 4 oz 115g semi-sweet chocolate (bar or chips)
  • 2 large eggs
  • 2 egg yolks
  • ¼ cup 50g granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional Garnish:
  • Powdered sugar for dusting
  • Fresh berries strawberries, raspberries
  • Vanilla ice cream or whipped cream

Method
 

  1. Step 1 – Prep the Ramekins
  2. Preheat oven to 425°F (220°C). Butter four 6-oz ramekins and dust with cocoa powder to prevent sticking.
  3. Step 2 – Melt Chocolate & Butter
  4. In a microwave-safe bowl, combine butter and chocolate. Heat in 20-second bursts, stirring each time, until smooth.
  5. Step 3 – Mix the Batter
  6. In a separate bowl, whisk together eggs, egg yolks, sugar, vanilla, and salt until slightly frothy. Stir in the melted chocolate mixture, then fold in the flour until just combined.
  7. Step 4 – Fill the Ramekins
  8. Divide the batter evenly among the ramekins. Place them on a baking sheet for easy transfer.
  9. Step 5 – Bake
  10. Bake for 12–14 minutes. The edges should be set while the center remains soft. Do not overbake — the gooey center is the secret!
  11. Step 6 – Serve Warm
  12. Let the cakes rest for 1 minute, then carefully invert each onto a dessert plate. Dust with powdered sugar, add berries, and serve immediately.
