Method
- Preheat oven to 375°F / 190°C. Grease a 9×13 baking dish.
- Cook macaroni until al dente, drain, and set aside.
- In a mixing bowl, combine ground beef, egg, breadcrumbs, milk, cheddar, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently.
- Press meat mixture evenly into the baking dish. Bake 20 minutes.
- Meanwhile, melt butter in a saucepan. Whisk in flour and cook 1 minute.
- Slowly whisk in milk, cooking until thickened. Stir in cheddar, paprika, salt, and pepper.
- Toss cooked pasta with the cheese sauce.
- Spread mac and cheese over the partially baked meatloaf.
- Top with extra cheese if desired and bake 20–25 minutes, until bubbly and lightly golden.
- Rest 5–10 minutes, slice, garnish with parsley, and serve.
Notes
Mix meatloaf gently to keep it tender.
Slightly undercook pasta — it finishes in the oven.
Great for leftovers and freezer meals.
