Ingredients
  

  • For the Cake:
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • ¾ cup sugar
  • 3 large eggs
  • ½ cup mango puree fresh or canned
  • 1 tsp vanilla extract
  • ¼ cup milk
  • For the Mango Cream Filling:
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • ½ cup mango puree
  • ½ cup diced fresh mango
  • Optional for Decoration:
  • Sliced mango kiwi, or berries
  • Mint leaves or edible flowers
  • Whipped cream for fruit cake decoration

Method
 

  1. Step 1 – Make the Mango Puree
  2. Peel and dice ripe mangoes, then blend until smooth. Set aside one cup — half for the batter and half for the filling.
  3. Step 2 – Prepare the Cake Batter
  4. Preheat oven to 350°F (175°C). Grease and line two 8-inch round pans.
  5. Cream butter and sugar until fluffy. Add eggs one by one, then stir in vanilla and mango puree.
  6. In another bowl, whisk flour, baking powder, and salt. Add to the wet ingredients alternately with milk until smooth.
  7. Step 3 – Bake the Cake
  8. Pour the batter into the pans and bake for 25–30 minutes or until a toothpick comes out clean. Let the cakes cool completely.
  9. Step 4 – Make the Mango Cream Filling
  10. Whip the cream and powdered sugar until soft peaks form. Gently fold in mango puree and diced mango. Chill for 15–20 minutes.
  11. Step 5 – Assemble the Cake
  12. Place one cake layer on a serving plate and spread the mango cream evenly. Add the second layer and coat the outside lightly with remaining cream.

Notes
