Mouthwatering Crock Pot Beef and Broccoli

Ingredients
  

  • 1 ½ lbs flank steak or chuck roast thinly sliced
  • 1 cup beef broth
  • ½ cup low-sodium soy sauce
  • ½ cup brown sugar or honey
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated (or ½ tsp ground ginger)
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 3 cups broccoli florets fresh or frozen
  • Optional: sesame seeds & green onions for garnish

Method
 

  1. Prepare the Beef
  2. Slice beef into thin strips and place into the slow cooker.
  3. Make the Sauce
  4. In a bowl, whisk together beef broth, soy sauce, brown sugar, garlic, and ginger.
  5. Pour the sauce over the beef and gently mix.
  6. Slow Cook
  7. Cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the beef is tender.
  8. Thicken the Sauce
  9. Stir together cornstarch and water to make a slurry.
  10. Add to the crock pot and stir.
  11. Cook for 20–30 minutes until the sauce thickens.
  12. Add Broccoli
  13. Stir in the broccoli and cook for an additional 10–15 minutes until tender but still bright green.
  14. Serve
  15. Serve over rice, noodles, or cauliflower rice. Garnish with sesame seeds or green onions if desired.

Notes

Use low-sodium soy sauce to prevent the dish from being too salty.
Add broccoli only at the end to keep it crisp and vibrant.
For sweeter sauce: add 1–2 extra tablespoons brown sugar.
For spice: add crushed red pepper flakes or sriracha.
This recipe reheats and freezes extremely well—perfect for meal prep.
