Prep Time 15 minutes
Servings: 8 mini pies

Ingredients

  • For the Crust:
  • 1 ½ cups crushed vanilla wafers or graham crackers
  • 4 tablespoons unsalted butter melted
  • For the Banana Cream Filling:
  • 1 package 3.4 oz / 96 g instant banana pudding mix
  • 1 cup cold milk
  • 4 oz 115 g cream cheese, softened
  • ½ cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping Cool Whip or similar
  • 2 –3 ripe bananas sliced
  • For Topping:
  • Extra whipped cream
  • Banana slices for garnish
  • Optional caramel or chocolate drizzle

Method

  1. Make the Crust:
  2. In a small bowl, combine crushed vanilla wafers with melted butter. Mix until crumbs are evenly coated. Spoon about 1–2 tablespoons into small dessert cups or ramekins and press gently to form the base.
  3. Prepare the Filling:
  4. Beat the cream cheese until smooth. Add sweetened condensed milk, vanilla extract, and instant banana pudding mix. Slowly whisk in the cold milk and mix until thick and creamy.
  5. Fold in Whipped Topping:
  6. Gently fold in the whipped topping until smooth and fluffy. This creates the light, airy texture of the filling.
  7. Assemble:
  8. Spoon a layer of filling over the crust in each cup. Add a few banana slices, then top with more filling. Smooth the top.
  9. Chill:
  10. Refrigerate for 1–2 hours to allow the pies to set and the flavors to blend.
  11. Serve:
  12. Top with whipped cream, fresh banana slices, and a drizzle of caramel or chocolate if desired. Serve chilled and enjoy!

Notes

  • Use mini bananas for a cute topping that won’t brown quickly.
  • To prevent banana slices from turning brown, lightly coat them with lemon juice before layering.
  • Swap vanilla wafers for shortbread or Biscoff cookies for a flavor twist.
  • Want to switch it up? Try this recipe with chocolate pudding for a chocolate banana dessert.
