These No-Bake Pumpkin Bites are a soft, chewy, healthy pumpkin treat made with oat flour, pumpkin puree, nut butter, and warm fall spices. A perfect option for pumpkin recipes healthy, gluten free desserts, and Thanksgiving sweets that require no baking and take only minutes to prepare.

Ingredients
  

  • 1 cup oat flour or blended rolled oats
  • ½ cup pumpkin puree
  • ¼ cup almond butter or peanut butter
  • 2 –3 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • Pinch of salt
  • Optional Add-Ins:
  • Mini chocolate chips
  • Chia seeds
  • Coconut flakes
  • Crushed nuts
  • Protein powder
  • Cocoa powder

Method
 

  1. In a bowl, mix oat flour, pumpkin pie spice, and salt.
  2. In another bowl, combine pumpkin puree, nut butter, maple syrup, and vanilla.
  3. Stir the wet mixture into the dry ingredients until a dough forms.
  4. Adjust texture: add more oat flour if too sticky, or a splash of milk if too dry.
  5. Fold in optional mix-ins like chocolate chips or nuts.
  6. Roll into bite-sized balls using your hands or a small scoop.
  7. Place bites on a tray and chill in the refrigerator for 20–30 minutes.
  8. Enjoy immediately or store in an airtight container.

Notes

 
Use thick pumpkin puree for firmer bites.
Add more oat flour if the mixture is too soft to roll.
For sweeter bites, add an extra tablespoon of maple syrup.
For more protein, mix in a scoop of vanilla or pumpkin protein powder.
Dip half the bite in melted chocolate for a dessert-style treat.
Store in fridge for 1 week or freeze for up to 2 months.
