Ingredients
  

  • Dry Ingredients:
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • Wet Ingredients:
  • 1 ¾ cups milk or non-dairy milk such as almond or oat milk
  • 1 large egg
  • 2 tablespoons maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • Add-ins & Toppings:
  • 2 medium apples peeled and diced
  • ¼ cup chopped nuts walnuts or pecans, optional
  • Optional toppings: extra apple slices yogurt, honey drizzle, or cinnamon sugar

Method
 

  1. Preheat Oven:
  2. Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish with butter or coconut oil.
  3. Combine Dry Ingredients:
  4. In a large mixing bowl, stir together oats, baking powder, cinnamon, nutmeg, and salt.
  5. Mix Wet Ingredients:
  6. In a separate bowl, whisk milk, egg, maple syrup, melted butter, and vanilla extract until smooth.
  7. Combine Wet and Dry:
  8. Pour the wet mixture into the dry ingredients and mix gently until combined.
  9. Add Apples and Nuts:
  10. Fold in the diced apples and nuts, making sure they’re evenly distributed throughout the batter.
  11. Pour and Bake:
  12. Pour the mixture into the prepared dish. Smooth the top and bake for 30–35 minutes, or until golden and the center is just set.
  13. Serve:
  14. Serve warm straight from the oven, or let it cool and refrigerate for a quick breakfast bake later in the week.

Notes

  • For best texture, use rolled oats, not instant oats.
  • Don’t overbake — the center should be soft and moist like a breakfast pudding.
