Ingredients

  • 1 loaf brioche or challah bread cut into 1-inch cubes
  • ½ cup pumpkin purée not pumpkin pie filling
  • 4 large eggs
  • ¾ cup milk or any dairy-free alternative
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of salt
  • 1 tablespoon butter or oil for frying
  • Optional Toppings:
  • Powdered sugar
  • Maple syrup
  • Whipped cream
  • Toasted pecans or walnuts
  • Pumpkin pie spice for garnish

Method
 

  1. Prepare the Batter:
  2. In a large bowl, whisk together the pumpkin purée, eggs, milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until smooth. The batter should be rich and creamy with a vibrant orange hue.
  3. Soak the Bread:
  4. Add the bread cubes to the pumpkin mixture. Gently toss until every cube is coated. Let them soak for 2–3 minutes so the bread absorbs the flavor without getting soggy.
  5. Cook the Bites:
  6. Heat a large nonstick skillet or griddle over medium heat. Add butter and let it melt. Place the soaked bread cubes onto the pan, cooking for 2–3 minutes per side until golden brown and crisp.
  7. Serve Warm:
  8. Remove the cooked bites and place them on a serving plate. Dust with powdered sugar, drizzle with maple syrup, and top with whipped cream or nuts if desired.

Notes

  • Baked Version: Spread coated bread cubes on a parchment-lined baking sheet and bake at 375°F (190°C) for 15–18 minutes, flipping halfway through.
