Ingredients
  

  • 2 chicken breasts diced
  • 1 cup long-grain rice uncooked
  • 1 can 14 oz diced tomatoes
  • 1 1/2 cups chicken broth
  • 1 green bell pepper chopped
  • 1 small onion chopped
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon thyme
  • Salt and pepper to taste
  • 1/2 cup sliced smoked sausage optional
  • 2 tablespoons olive oil

Method
 

  1. Grease the slow cooker with olive oil.
  2. Add chicken, bell pepper, onion, celery, and garlic.
  3. Stir in tomatoes, broth, rice, and seasonings.
  4. Mix well, cover, and cook on low for 4–5 hours or high for 2–3 hours until rice is tender.
  5. Stir once during cooking if possible.
  6. Fluff with a fork, adjust seasoning, and serve.

Notes

Use long-grain rice to prevent mushy texture.
Avoid opening the lid frequently.
Add shrimp in the last 30 minutes for variation.
