Slow Cooker Garlic Butter Beef Bites & Potatoes

Tender beef bites and buttery potatoes slow-cooked in a rich garlic-herb sauce — cozy, easy, and perfect for lazy dinners.

  • 2 lbs beef sirloin chuck, or stew meat, cubed
  • 1.5 lbs baby potatoes halved
  • 4 tbsp butter melted
  • 1 tbsp olive oil
  • 5 cloves garlic minced
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • Salt & pepper to taste
  • 2 tbsp chopped parsley optional

Method
 

  1. Season beef with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a skillet; sear beef on all sides until browned.
  3. Add potatoes to the slow cooker. Place seared beef on top.
  4. Whisk melted butter, garlic, broth, and Worcestershire. Pour over beef and potatoes.
  5. Cook on LOW 6–8 hours or HIGH 3–4 hours, until tender.
  6. Stir gently, garnish with parsley, and serve warm.

Notes

Skip the sear if short on time — but browning adds flavor.
Add carrots or mushrooms for extra veggies.
Store leftovers in the fridge up to 3 days or freeze up to 2 months.
