Ingredients
  

  • For the Peach Filling:
  • 2 cans 15 oz each sliced peaches, drained (or 5 cups fresh peaches, peeled and sliced)
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch optional, for thicker syrup
  • For the Batter:
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup unsalted butter melted

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Place butter in a 9x13-inch baking dish and melt it in the oven while preheating.
  3. In a saucepan, combine peaches, sugars, lemon juice, cinnamon, and nutmeg. Simmer for 5 minutes until syrupy. Add cornstarch if a thicker filling is desired.
  4. In a bowl, whisk together flour, sugar, baking powder, and salt. Gradually add milk until a smooth batter forms.
  5. Pour the batter evenly over the melted butter. Do not stir.
  6. Gently spoon the warm peach mixture over the batter.
  7. Bake for 40–45 minutes, or until golden brown and bubbling.
  8. Serve warm with ice cream or whipped cream.

Notes

  • For extra sweetness, sprinkle cinnamon sugar on top before baking.
  • Use canned peaches packed in juice (not syrup) for the best texture.
  • Add a dash of vanilla extract or bourbon for extra depth.
  • Leftovers keep well in the refrigerator for up to 4 days.
