Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil if needed
  • 1 small onion diced
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 2 cups uncooked short pasta
  • 1 cup milk
  • ¾ cup heavy cream
  • 1 –1½ cups shredded cheddar mozzarella, or Velveeta cubes
  • 2 tbsp grated Parmesan
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (optional)

Method
 

  1. Brown the ground beef in a large skillet over medium heat; drain if necessary.
  2. Add onion and cook until softened. Stir in garlic and cook 30 seconds.
  3. Season with Italian seasoning, paprika, salt, and pepper.
  4. Pour in the beef broth and bring to a gentle boil. Stir in the pasta.
  5. Simmer 10–12 minutes, stirring occasionally, until pasta is tender.
  6. Stir in milk and heavy cream and simmer 2–3 minutes.
  7. Reduce heat and stir in cheeses until melted and creamy.
  8. Adjust seasoning, garnish with parsley, and serve.

Notes

Add peas, spinach, or mushrooms for extra veggies.
Thin the sauce with a splash of milk if it thickens too much.
For richer flavor, mix in a tablespoon of cream cheese.
Reheat gently with added milk for best texture.
