Ingredients

  • ¼ cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup diced fresh strawberries
  • For the Cheesecake Filling:
  • 4 oz cream cheese softened
  • 2 tablespoons powdered sugar
  • Optional Toppings:
  • 2 tablespoons crushed graham crackers
  • Extra diced strawberries for garnish

Method
 

  1. Make the Cookie Dough:
  2. In a mixing bowl, cream together butter, brown sugar, and white sugar until light and fluffy. Add the egg and vanilla extract, mixing until smooth.
  3. Combine Dry Ingredients:
  4. In a separate bowl, whisk flour, baking powder, and salt. Slowly add to the wet mixture, stirring until a soft dough forms.
  5. Add Strawberries:
  6. Gently fold in diced strawberries. Chill the dough in the refrigerator for 20–30 minutes to make it easier to handle.
  7. Make the Cheesecake Filling:
  8. In a small bowl, beat together cream cheese and powdered sugar until creamy and smooth.
  9. Form the Cookies:
  10. Scoop about 1 tablespoon of dough, flatten it slightly, and add ½ teaspoon of cheesecake filling in the center. Cover with another small piece of dough and seal the edges gently.
  11. Bake:
  12. Place cookies on a parchment-lined baking sheet and bake at 350°F (175°C) for 12–14 minutes or until lightly golden around the edges.
  13. Cool and Serve:
  14. Let cookies cool completely on a wire rack. Sprinkle with crushed graham crackers or top with fresh strawberries if desired.
