Make the Cookie Dough:
In a mixing bowl, cream together butter, brown sugar, and white sugar until light and fluffy. Add the egg and vanilla extract, mixing until smooth.
Combine Dry Ingredients:
In a separate bowl, whisk flour, baking powder, and salt. Slowly add to the wet mixture, stirring until a soft dough forms.
Add Strawberries:
Gently fold in diced strawberries. Chill the dough in the refrigerator for 20–30 minutes to make it easier to handle.
Make the Cheesecake Filling:
In a small bowl, beat together cream cheese and powdered sugar until creamy and smooth.
Form the Cookies:
Scoop about 1 tablespoon of dough, flatten it slightly, and add ½ teaspoon of cheesecake filling in the center. Cover with another small piece of dough and seal the edges gently.
Bake:
Place cookies on a parchment-lined baking sheet and bake at 350°F (175°C) for 12–14 minutes or until lightly golden around the edges.
Cool and Serve:
Let cookies cool completely on a wire rack. Sprinkle with crushed graham crackers or top with fresh strawberries if desired.
