Ingredients

  • 2 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup unsalted butter softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¾ cup chopped fresh strawberries or freeze-dried strawberries
  • Cheesecake Filling
  • 6 oz cream cheese softened
  • 3 tbsp powdered sugar
  • ½ tsp vanilla extract

Method
 

  1. Prepare Cheesecake Filling
  2. In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Scoop small teaspoons onto parchment paper and freeze for 20–30 minutes.
  3. Mix Dry Ingredients
  4. In a bowl, whisk together flour, baking soda, and salt. Set aside.
  5. Cream Butter & Sugars
  6. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  7. Add Wet Ingredients
  8. Mix in egg and vanilla extract until fully combined.
  9. Combine Dough
  10. Gradually add dry ingredients to wet mixture. Fold gently until just combined. Stir in strawberries carefully.
  11. Assemble Cookies
  12. Scoop cookie dough, flatten slightly, place frozen cheesecake filling in the center, and seal dough around it.
  13. Chill Dough
  14. Chill assembled cookies for 20 minutes to prevent spreading.
  15. Bake
  16. Bake at 350°F (175°C) for 12–14 minutes until edges are set and centers are soft.
  17. Cool
  18. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Freeze-dried strawberries give the strongest strawberry flavor with less moisture.
