- Prepare Cheesecake Filling
- In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Scoop small teaspoons onto parchment paper and freeze for 20–30 minutes.
- Mix Dry Ingredients
- In a bowl, whisk together flour, baking soda, and salt. Set aside.
- Cream Butter & Sugars
- In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Add Wet Ingredients
- Mix in egg and vanilla extract until fully combined.
- Combine Dough
- Gradually add dry ingredients to wet mixture. Fold gently until just combined. Stir in strawberries carefully.
- Assemble Cookies
- Scoop cookie dough, flatten slightly, place frozen cheesecake filling in the center, and seal dough around it.
- Chill Dough
- Chill assembled cookies for 20 minutes to prevent spreading.
- Bake
- Bake at 350°F (175°C) for 12–14 minutes until edges are set and centers are soft.
- Cool
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Freeze-dried strawberries give the strongest strawberry flavor with less moisture.
