Ingredients
  

  • For the Sweet Chili Chicken
  • 2 cups cooked shredded chicken rotisserie or leftover chicken
  • ½ cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • ½ teaspoon chili flakes optional
  • For the Wraps
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • ½ cup shredded carrots
  • ½ cup sliced cucumbers
  • ¼ cup chopped green onions
  • ½ cup mayo or Greek yogurt optional spread
  • ½ avocado sliced (optional)

Method
 

  1. Make the Sweet Chili Chicken:
  2. In a bowl, whisk together the sweet chili sauce, soy sauce, lime juice, garlic powder, and chili flakes. Add shredded chicken and toss to coat. Warm in a skillet for 2–3 minutes if desired.
  3. Prepare the Tortillas:
  4. Lay the tortillas flat and spread a thin layer of mayo or Greek yogurt on each one.
  5. Assemble the Wraps:
  6. Add a generous scoop of sweet chili chicken to the center of each tortilla.
  7. Add the Vegetables:
  8. Top with shredded lettuce, carrots, cucumbers, green onions, and avocado slices.
  9. Roll the Wraps:
  10. Fold in the sides, then roll tightly from the bottom up. Slice in half if serving immediately.
  11. Serve or Store:
  12. Enjoy right away, or wrap in foil or parchment for an on-the-go meal.
